  • Beef (chuck roast): 300g
  • Daikon radish: 1/2
  • Onion: 1/2
  • Garlic: 5 cloves
  • Ginger: 10g
  • Bay leaves: 2
  • Star anise: 2
  • Cloves: 2
  • Black pepper: 1/2 tsp
  • Fish sauce: 2 tbsp
  • Sugar: 2 tbsp
  • Salt: 1 tsp
  • Bean sprouts: 100g
  • Herbs (basil, green onions, chili peppers, lemon)

Beef Preparation

  1. Soak the beef in cold water for about 1 hour to remove blood.

Broth Preparation

  1. Coarsely chop the daikon radish, onion, garlic, and ginger.
  2. Wash the bay leaves, star anise, and cloves.
  3. Put enough water in a pot and add the beef, daikon radish, onion, garlic, ginger, bay leaves, star anise, and cloves.
  4. Bring to a boil, then simmer for 40 minutes over low heat.
  5. Remove the beef and rinse it with cold water. Strain the broth through cheesecloth.
